Gingerbread Delight

There's something truly magical about the aroma of freshly baked gingerbread filling the kitchen, a scent that carries with it the warmth of childhood memories and the joy of creating something special. Recently, a parent ask me for my gingerbread recipe – a time-honoured tradition that has been a part of our household for years.

As a parent myself, I had embarked on a quest to find and perfect the ideal gingerbread recipe when my own children were preschoolers. I wanted to recreate the magic of my own childhood, where my Mum would make gingerbread dough, and my siblings and I would eagerly create various biscuit shapes, and then watch as they baked in the oven.

After much experimentation and tweaking, I eventually achieved the perfect balance of flavours and textures. From that moment on, our gingerbread recipe became a staple in our household, bringing joy not only to my own family but to friends and extended family too.

Recipe: Gingerbread Delight


  • 125g butter

  • 1/2 cup brown sugar, firmly packed

  • 1/2 cup golden syrup

  • 1 egg yolk

  • 2 1/2 cups plain flour

  • 1 tsp bicarbonate soda

  • 1 tbsp ground ginger

  • 1 tsp mixed spice


Preheat and Prepare: Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit). Line baking trays with non-stick baking paper.

Cream and Mix: Using a beater, cream the butter and sugar until light and fluffy. Beat in golden syrup and egg yolk. Stir in sifted flour, ginger, mixed spice, and bicarbonate soda.

Knead and Chill: Knead the mixture on a lightly floured surface until smooth. Cover in plastic wrap and refrigerate for 30 minutes.

Roll and Cut: Roll the dough between two sheets of baking paper or with a decent sprinkle of flour on the bench until it's 5mm thick. Cut out gingerbread men or any desired shapes and place them 3cm apart on the prepared baking trays.

Bake to Golden Perfection: Bake for 8-10 minutes or until golden. Transfer to wire racks to cool.

Decorate with Delight: Get creative! Decorate with icing and lollies for a festive touch, or enjoy them plain for a classic treat.
